Sea Bass with Pesto
- 1 tbsp olive oil
- 1 sea bass fillet, cleaned
- Salt and pepper
- 1 chopped tomato
- 1 tbsp pine nuts
- 2 tbsp olive oil
- 1⁄2 lemon, juice and zest
- Handful of basil leaves
- 1 tbsp pine nuts
- 3 tbsp olive oil
- 1 clove of garlic
- Salt and pepper
- Make your pesto dressing simply by blending together all the ingredients in a food processor. Set aside. Cook the sea bass by frying the fillet, skin-side down, in the olive oil for 3 minutes, then flipping it over and frying for another 3 minutes on the other side. Set aside.
- Mix the tomato, pine nuts, some olive oil, and the lemon zest and juice in a bowl. Season well. Lay the fish fillet on a plate, pile the tomato salad on top, and drizzle all over with the pesto. Perfecto!
