Sea Bass with Pesto

  • 1 tbsp olive oil
  • 1 sea bass fillet, cleaned
  • Salt and pepper
  • 1 chopped tomato
  • 1 tbsp pine nuts
  • 2 tbsp olive oil
  • 1⁄2 lemon, juice and zest
  • Handful of basil leaves
  • 1 tbsp pine nuts
  • 3 tbsp olive oil
  • 1 clove of garlic
  • Salt and pepper
  • Make your pesto dressing simply by blending together all the ingredients in a food processor. Set aside. Cook the sea bass by frying the fillet, skin-side down, in the olive oil for 3 minutes, then flipping it over and frying for another 3 minutes on the other side. Set aside.
  • Mix the tomato, pine nuts, some olive oil, and the lemon zest and juice in a bowl. Season well. Lay the fish fillet on a plate, pile the tomato salad on top, and drizzle all over with the pesto. Perfecto!
