Sea Bass with Sesame Noodles
- 150g wholemeal noodles
- 25g toasted sesame seeds, crushed
- 2 tbsp soy sauce
- 1 tbsp oil
- 1 tsp rice wine vinegar
- 200g baby spinach leaves
- 2 x seabass fillets or other white fish
- Mix together the crushed sesame seeds, soy sauce, oil, vinegar, and 1 tbsp of water. Set aside. Cook the noodles to pack instructions, drain, and set aside. In the same pan, tip in the spinach leaves and cook to wilt completely, then stir in the noodles and your sesame dressing. Toss to combine.
- Season the skin of the fish, then fry in a little oil for 3 mins, skin-side down. Flip the fish over, and fry for a further 1 minute on the other side. Serve the golden fish fillet on top of your noodle and spinach mix, scatter with more sesame seeds and a little soy sauce, and enjoy.
