Serrano Ham and Pear Salad
- 2 slices of ciabatta, chopped into cubes
- 100g serrano ham or similar
- Olive oil
- 1 red pear, cut into wedges
- 50g wild rocket
- 1 tsp French mustard
- 2 tbsp red wine vinegar
- 1 tsp clear honey
- 1 chopped shallot
- Toss the cubed bread in 1 tbsp of oil and grill for 5 mins, or until golden all over. Whisk the mustard, vinegar, honey and shallot together with 2 tbsp of olive oil and some seasoning.
- Arrange the pear, ham and rocket leaves onto 2 plates. Scatter with the warm croutons and drizzle with dressing, then serve immediately.
