Serrano Ham and Pear Salad

  • 2 slices of ciabatta, chopped into cubes
  • 100g serrano ham or similar
  • Olive oil
  • 1 red pear, cut into wedges
  • 50g wild rocket
  • 1 tsp French mustard
  • 2 tbsp red wine vinegar
  • 1 tsp clear honey
  • 1 chopped shallot
  • Toss the cubed bread in 1 tbsp of oil and grill for 5 mins, or until golden all over. Whisk the mustard, vinegar, honey and shallot together with 2 tbsp of olive oil and some seasoning.
  • Arrange the pear, ham and rocket leaves onto 2 plates. Scatter with the warm croutons and drizzle with dressing, then serve immediately.
