Sesame Cod Broth
- 100g cod fillet or other flaky white fish
- 1 tsp sesame oil
- 2 tsp soy sauce
- 2 tsp honey
- 1 tsp sesame seeds
- 1⁄2 pint chicken stock
- 1 tbsp soy sauce
- 1⁄2 tsp chilli flakes
- 50g frozen peas
- 3 tbsp coriander, chopped
- Marinate the cod for 15 minutes in a bowl with the soy sauce, sesame oil, and honey. When ready, place in a steamer (or a colander with some tin foil) and steam for 12 minutes.
- Meanwhile, make the broth. Cook the chicken stock in a pan with the soy sauce and chilli flakes, infusing for 5 minutes. Toss in the peas and coriander, and cook for a further minute. Serve the cod in a deep bowl, on top of the broth, sprinkled with sesame seeds.
