Sesame Cod with Japanese Broth

  • 100g cod fillet
  • 1 tsp sesame oil
  • 2 tsp soy sauce
  • 2 tsp honey
  • 1 tsp sesame seeds
  • 1⁄2 pint chicken stock
  • 1 tbsp soy sauce
  • 1⁄2 tsp chilli flakes
  • 50g peas
  • 3 tbsp coriander, chopped
  • Mix the sesame oil, soy sauce, honey, and cod in a bowl, and allow to marinate for about 20 minutes. Place the cod in a steamer, and cook for 12 minutes.
  • Meanwhile, make the broth by combining the stock, soy sauce, and chilli flakes in a saucepan, and heat for 5 minutes to combine the flavours. Stir in the peas and coriander, and cook for a further minute. Serve the broth in a deep bowl, top with the cod, and sprinkle with the sesame seeds. Sheer perfection!
