Sesame Noodle Snack

  • 1 nest of dried egg noodles
  • Handful of frozen peas and fava beans, or similar
  • 1 tbsp mixed seeds
  • ½ tsp soy sauce
  • 1 tsp sesame oil
  • Optional extras: Carrot ribbons, shredded spring onion, snow peas, and sliced red capsicum
  • Pop the noodles in a bowl and cover with boiling water. Allow to stand for 10 mins to soften, then drain and refresh under the tap.
  • Put the drained noodles in a bowl or bento box, and add the peas, seeds, beans, soy sauce, sesame oil, and any additional extras you fancy. Give it a mix, and serve as a light lunch or a tasty side.
