Sesame Pork with Mangetout

  • 100g sesame seeds, toasted
  • Olive oil
  • 2 sliced shallots
  • 2 red chillies, deseeded and thinly sliced
  • 1 lemon, zest and juice
  • 350g pork loin, sliced into strips
  • Knob of butter
  • Dash of sesame oil
  • 100g mangetout
  • Blanch the mangetout in salted boiling water for 1 min, before draining and setting to one side. Heat up a wok with a splash of olive oil and fry the chilli, lemon zest and shallots for 2 mins. Season the meat and fry for a few mins with the shallot mixture, until golden brown and cooked through. Stir in the butter, mangetout and season seeds and drizzle with lemon juice, then finish with a dash of sesame oil and serve.
