What you'll need:
- 1 tbsp oil
- 3 carrots, chopped
- 500g lamb mince
- 500ml beef stock
- 85g butter
- 1 onion, chopped
- 2 tbsp tomato puree
- Splash of Worcestershire sauce
- 1 tsp smoked paprika
- 900g potato cut into chunks
Time: 1 hour
Serves: 4
Method
First
Soften your carrots and onion in some oil, in a large saucepan for five minutes. When well sweated, add the lamb mince and brown for a few minutes. Stir in the tomato puree, worcestershire sauce and paprika, along with some seasoning. Add the stock and simmer gently for 40 minutes.
Second
Heat your oven to 180C. Make your mash by boiling the potatoes in salted water for 15 minutes, or until soft. Drain and mash with milk and butter, then leave to cool.
Third
Put the mince and veg mixture into an ovenproof dish, then top with the mash. Bake for 25 minutes, or until golden. Serve with your favourite greens.
