Short Rib Bao Buns

  • 500g beef short ribs
  • 1 tbsp oil
  • 250ml soy sauce
  • 100g brown sugar
  • 2 tbsp sesame oil
  • 2 spring onions
  • 6 star anise
  • 1 tbsp chilli flakes
  • 1 tbsp cardamom pods
  • 3 cloves
  • 50g honey
  • 100ml rice wine
  • 4 x steamed bao buns, to serve
  • Pickles and salads, to serve
  • Preheat the oven to 170C. Put the short ribs and oil in a casserole, and brown over a high heat for about 3 mins, turning three times. Add all of the remaining ingredients, along with 300ml of water. Bring to a simmer, cover with a lid, and stick the whole lot in the oven for about 2.5 hours.
  • Drain the hot beef, and shred between two forks. Stuff the meat into the bao buns (or a normal burger bun!) and add all the pickles and salads you fancy!
