Short Rib Bao Burgers
- 500g beef short ribs (bone in)
- 1 tbsp oil
- 250g soy sauce
- 100g brown sugar
- 2 tbsp sesame oil
- 2 spring onions
- 6 star anise
- 1 tbsp chilli flakes
- 1 tbsp cardamom pods
- 3 cloves
- 50g honey
- 100ml rice wine
- Bao buns, to serve
- Lettuce and pickles, to serve
- Preheat the oven to 170C. Put the short ribs and oil in a flame-proof casserole, and brown over a high heat for 3-4 mins. Add all of the remaining ingredients to the casserole, along with 300ml of water. Bring to a simmer, then pop in the oven - covered - for about 2.5 hours or until very tender.
- Drain the beef, which should be very tender, then shred between two forks. Serve big piles of the rib meat in your bao buns, along with all your favourite sides.
