Short Rib Bao Burgers

  • 500g beef short ribs (bone in)
  • 1 tbsp oil
  • 250g soy sauce
  • 100g brown sugar
  • 2 tbsp sesame oil
  • 2 spring onions
  • 6 star anise
  • 1 tbsp chilli flakes
  • 1 tbsp cardamom pods
  • 3 cloves
  • 50g honey
  • 100ml rice wine
  • Bao buns, to serve
  • Lettuce and pickles, to serve
  • Preheat the oven to 170C. Put the short ribs and oil in a flame-proof casserole, and brown over a high heat for 3-4 mins. Add all of the remaining ingredients to the casserole, along with 300ml of water. Bring to a simmer, then pop in the oven - covered - for about 2.5 hours or until very tender.
  • Drain the beef, which should be very tender, then shred between two forks. Serve big piles of the rib meat in your bao buns, along with all your favourite sides.
