Shredded Shroom Burgers
- 600g oyster mushrooms
- 2 tbsp smoked paprika
- 2 tsp garam masala
- 4 tbsp oil
- 4 tsp chipotle paste
- 2 tsp agave syrup
- 2 tsp soy sauce
- Grated cheese or vegan alternative
- Buns, slaw and spicy mayo, to serve
- Preheat the oven to 200C. Pull the mushrooms apart into strips and toss onto a baking tray. Mix with the oil, paprika and garam masala, season with salt and pepper, then bake for 15 mins.
- Let the mixture cool a little, then shape into 4 mounds and top with a sprinkle of grated cheese. Bake in the oven for 2 more minutes, then stuff the mounds into toasted brioche buns and slather with your favourite slaw, sauce or pickles to serve.
