Shredded Shroom Burgers

  • 600g oyster mushrooms
  • 2 tbsp smoked paprika
  • 2 tsp garam masala
  • 4 tbsp oil
  • 4 tsp chipotle paste
  • 2 tsp agave syrup
  • 2 tsp soy sauce
  • Grated cheese or vegan alternative
  • Buns, slaw and spicy mayo, to serve
  • Preheat the oven to 200C. Pull the mushrooms apart into strips and toss onto a baking tray. Mix with the oil, paprika and garam masala, season with salt and pepper, then bake for 15 mins.
  • Let the mixture cool a little, then shape into 4 mounds and top with a sprinkle of grated cheese. Bake in the oven for 2 more minutes, then stuff the mounds into toasted brioche buns and slather with your favourite slaw, sauce or pickles to serve.
