Simple Bacon and Tomato Soup

  • 1 tsp olive oil
  • ½ chopped onion
  • 2 chopped garlic cloves
  • 4 slices of smoked bacon, chopped
  • ½ pint chicken stock
  • 2 chopped plum tomatoes
  • 2 tbsp tomato puree
  • Heat the oil in a saucepan and gently sweat the garlic and onion for 4 mins to soften. Add the bacon and cook for another 4 mins.
  • Pour in the stock and add the tomatoes. Cook for 2 mins, then stir in the tomato puree and cook on a medium heat for 5 mins. Season liberally, then blend with a stick blender until smooth. Serve warm with toasted garlic bread.
