Simple Cajun Turkey Salad
- 2 tbsp sesame seeds
- 2 tbsp oil
- 500g turkey breast, cut into strips
- 1 tbsp Cajun seasoning
- 1 red capsicum, sliced
- 120g mixed herb salad
- 120g guacamole
- 200g tortilla chips
- Heat a frying pan, and sprinkle in the sesame seeds to toast for a minute. Add the oil, chuck in the turkey strips, and stir in the Cajun seasoning and capsicum. Stir fry the whole lot for 5 mins, or until the turkey is cooked through.
- Meanwhile, divide your herb salad between 4 serving plates. Spoon the cooked Cajun turkey and capsicums over the salad, including all the spicy pan juices. Top each serving with a hearty dollop of guac, a pile or tortilla chips, and a grind of pepper. Nice!
