Simple Cajun Turkey Salad

  • 2 tbsp sesame seeds
  • 2 tbsp oil
  • 500g turkey breast, cut into strips
  • 1 tbsp Cajun seasoning
  • 1 red capsicum, sliced
  • 120g mixed herb salad
  • 120g guacamole
  • 200g tortilla chips
  • Heat a frying pan, and sprinkle in the sesame seeds to toast for a minute. Add the oil, chuck in the turkey strips, and stir in the Cajun seasoning and capsicum. Stir fry the whole lot for 5 mins, or until the turkey is cooked through.
  • Meanwhile, divide your herb salad between 4 serving plates. Spoon the cooked Cajun turkey and capsicums over the salad, including all the spicy pan juices. Top each serving with a hearty dollop of guac, a pile or tortilla chips, and a grind of pepper. Nice!
