Simple Green Olive Pasta
- 250g orecchiette or conchiglie pasta
- 3 tbsp olive oil
- 2 garlic cloves, sliced
- 150g jar of green olives, drained and chopped
- 8 tbsp passata
- Cook the pasta in boiling salted water until al dente. Meanwhile, fry the garlic in the oil for a minute or two to soften, then add the olives and cook with some seasoning for 2 mins more. Stir in the passata and cook for 5 mins, then add the pasta to the sauce with some cooking water, mix well, and serve.
