Simple Green Olive Pasta

  • 250g orecchiette or conchiglie pasta
  • 3 tbsp olive oil
  • 2 garlic cloves, sliced
  • 150g jar of green olives, drained and chopped
  • 8 tbsp passata
  • Cook the pasta in boiling salted water until al dente. Meanwhile, fry the garlic in the oil for a minute or two to soften, then add the olives and cook with some seasoning for 2 mins more. Stir in the passata and cook for 5 mins, then add the pasta to the sauce with some cooking water, mix well, and serve.
