Simple Pork and Prawn Paella Mixta
- 1 tbsp veg oil
- 1 chopped onion
- 200g pork tenderloin, diced
- 2 chopped garlic cloves
- 100g brown rice
- 1 tsp smoked paprika
- Pinch of saffron
- 500ml hot chicken stock
- 1 red capsicum, sliced
- 160g green beans, trimmed
- 60 large prawns, shelled
- Handful of chopped parsley
- Heat the oil in a large frying pan, and cook the onion for 5 mins to soften. Add the pork, and cook to brown all over. Tip in the garlic, rice, and paprika, along with plenty of seasoning. Stir the saffron into the chicken stock, and pour this over everything.
- Add the capsicum, cover the pan, and simmer for 25 mins on a low heat. Mix in the beans, cook covered for 10 mins more, then add the prawns for 2 more minutes. Stir in the parsley, and serve immediately.
