Simple Satay Chicken Strips
- 2 tbsp chunky peanut butter
- 1 grated garlic clove
- 1 tsp curry powder
- ½ tbsp soy sauce
- 2 tsp lime juice
- 2 chicken breast fillets, cut into thick strips
- 10cm cucumber, cut into fingers
- Sweet chilli sauce, to serve
- Preheat the oven to 200C, and line a baking tray with parchment. Mix 2 tbsp of peanut butter with 1 grated garlic clove, the curry powder, the soy sauce, and the lime juice in a bowl. Add the chicken strips, and mix well.
- Arrange the chicken pieces on the baking tray and bake for 10 mins, then serve hot with the cucumber fingers and sweet chilli sauce.
