Simple Tomato Tagliatelle

  • 1 tbsp olive oil
  • 1⁄2 onion, finely chopped
  • 1 garlic clove, crushed
  • 1 large tomato, deseeded and chopped
  • 2 tbsp red wine vinegar
  • 1 tsp caster sugar
  • 100g tagliatelle, cooked al dente
  • 2 tbsp fresh chives, chopped, for garnish
  • Heat the oil in a frying pan, and add the onion and garlic to soften for a minute or two. Stir in the tomato, vinegar, and sugar, and cook for 4 more minutes. Blend the mixture until smooth with a stick blender or food processor, the stir through the cooked tagliatelle. Serve piping hot with a garnish of chopped chives and a grind of black pepper.
