Sirloin Steak with Mustard Sauce
- 4 sirloin steaks
- 1 tbsp groundnut oil
- 50g baby spinach leaves
- 1 tbsp chopped chives
- For the Sauce
- 200ml crème fraîche
- 2 tsp Dijon mustard
- 1 tbsp crushed peppercorns
- Squeeze of lemon
- Rub the steaks with the oil and some seasoning, then sear for 90 seconds in a very hot pan before flipping and cooking for 2 mins more on the other side (for medium-rare). Remove and leave to rest for 3 mins.
- Meanwhile, mix the ingredients for the sauce in a small saucepan and simmer for a minute. Remove from the heat, stir in the lemon juice and the resting juices from the steaks, and season to taste. Arrange the spinach on 4 plates and sit the steaks on top, then spoon over the sauce and serve with a pile of chips and a sprinkling of chives.
