Sirloin with Ponzu Dip

  • 400g sirloin of beef
  • 1 tbsp oil
  • Thumb-sized piece of ginger, grated
  • ¼ cucumber, cut into matchsticks
  • Small handful of cress
  • 2 tsp toasted sesame seeds
  • Sticky rice, cooked to serve
  • For the Dip
  • 4 tbsp dark soy sauce
  • 1 lime, juice only
  • Pinch of chilli flakes
  • Pinch of sugar
  • Rub the sirloin with oil and season liberally. Sear in a banging hot pan for 8 mins all over (for rare), then remove from the pan and leave to rest. Meanwhile, mix the ingredients for the ponzu dip together, and leave to one side while the sugar dissolves.
  • Once the beef has rested, carve into thin slices with your sharpest knife. Fan the slices on a serving plate, then scatter with cucumber, cress, and sesame seeds. Serve with sticky rice, and share with a friend.
