Slow Cooker Brazilian Beef
- 1 tbsp olive oil
- 400g sliced beef shin
- 100g beef stock
- 2 tsp smoked paprika
- ½ lemon, juice only
- ½ tsp chilli powder
- 400g tin of chopped tomatoes
- 400g tin of black beans
- 1 bay leaf
- 2 sprigs of thyme
- 2 sliced carrots
- 25g chopped coriander
- Cooked brown rice, to serve
- Fry the beef shin in the oil for 4 mins to brown all over, then stir in the stock, paprika, lemon juice, chilli powder, tomatoes, beans, bay leaf, thyme, carrots and chopped coriander stalks. Bring to a simmer and season well.
- Add the mixture to a slow cooker. Cover and cook on low for 6 hours, or until the meat is falling apart, then cook with the lid off for 15 mins to thicken slightly. Stir in the chopped coriander, then serve with brown rice.
