Smoked Ham and Mushroom Linguine
- 2 tsp olive oil
- 2 sliced leeks
- 2 crushed garlic cloves
- 200g brown mushrooms, sliced
- 300g linguine
- 150g soft cheese
- 85g smoked ham, shredded
- Small pack of basil
- Grated parmesan
- Heat the oil in a saucepan and stir in the leeks with 2 tbsp of water and some seasoning. Cover and cook for 5 mins to soften, then tip in the mushrooms and garlic, and cook for 4 mins more. Meanwhile, cook the pasta until al dente and drain.
- Stir the soft cheese into the leek mixture, loosening with a little pasta water. Add the ham, basil and parmesan, and toss into the linguine with some black pepper, and serve.
