Smoked Ham Waldorf

  • 35g sultanas
  • 50ml fresh apple juice
  • 2 Little Gem lettuces, leaves separated
  • 2 celery stalks, sliced
  • 1 green apple, thinly sliced
  • 75g toasted walnut halves
  • 150g smoked gammon, torn into chunks
  • Chives, to garnish
  • For the Dressing
  • 50g mayo
  • 25ml crème fraîche
  • Squeeze of lemon
  • Add the apple juice to a small pan and warm through. Soak the sultanas in the apple juice for 20 mins. Meanwhile, add the lettuce leaves to a large bowl and add the walnuts, celery and apple slices. In a separate bowl, mix together the mayo, creme fraiche and lemon juice with some seasoning to make the dressing.
  • Stir the dressing through the salad along with the drained sultanas. Toss well, then flake in the smoked gammon. Divide between plates and serve with a chopped chive garnish and some crusty bread.
