Smoked Mackerel and Fennel Salad

  • 6 smoked mackerel fillets, flaked
  • 4 tbsp cream cheese
  • Small handful of toasted hazelnuts, chopped
  • For the Salad
  • 2 sliced fennel bulbs
  • 2 sliced shallots
  • 2 medium beetroot, grated
  • 1 radicchio, shredded
  • 6 sliced radishes
  • 1 lemon, juice only
  • 2 tbsp chopped dill
  • 2 tbsp olive oil
  • Simply tip all of the ingredients into a bowl, season well, and leave for 30 mins to lightly pickle the vegetables. Serve in bowls, topped with the flaked mackerel, dollops of cream cheese, and a sprinkling of hazelnuts.
