Smoked Mackerel and Fennel Salad
- 6 smoked mackerel fillets, flaked
- 4 tbsp cream cheese
- Small handful of toasted hazelnuts, chopped
- For the Salad
- 2 sliced fennel bulbs
- 2 sliced shallots
- 2 medium beetroot, grated
- 1 radicchio, shredded
- 6 sliced radishes
- 1 lemon, juice only
- 2 tbsp chopped dill
- 2 tbsp olive oil
- Simply tip all of the ingredients into a bowl, season well, and leave for 30 mins to lightly pickle the vegetables. Serve in bowls, topped with the flaked mackerel, dollops of cream cheese, and a sprinkling of hazelnuts.
