Smoked Mackerel, Chilli, and Bean Salad
- 1 red chilli, finely chopped
- 1 lemon, zest and juice only
- 2 smoked mackerel fillets
- 1 courgette, cut into ribbons
- 400g tin of butter beans, drained
- 3 tbsp olive oil
- 1 pack of parsley, chopped
- 50g feta, chopped
- Remove the skin of the mackerel and flake into large pieces, and add the fish to a salad bowl. Tip in the rest of the ingredients, and toss to combine, then serve with a grind of black pepper and a drizzle of extra virgin olive oil. Delicious!
