Smoked Mackerel, Chilli, and Bean Salad

  • 1 red chilli, finely chopped
  • 1 lemon, zest and juice only
  • 2 smoked mackerel fillets
  • 1 courgette, cut into ribbons
  • 400g tin of butter beans, drained
  • 3 tbsp olive oil
  • 1 pack of parsley, chopped
  • 50g feta, chopped
  • Remove the skin of the mackerel and flake into large pieces, and add the fish to a salad bowl. Tip in the rest of the ingredients, and toss to combine, then serve with a grind of black pepper and a drizzle of extra virgin olive oil. Delicious!
