Smoked Salmon Lettuce Cup Canapes

  • 1 little gem lettuce
  • 150g sliced smoked salmon
  • 1 red grapefruit, peeled and cut into chunks
  • 1 diced avocado
  • 200g cannellini beans, drained
  • 40g crème fraîche
  • ½ tbsp lemon juice
  • ½ tbsp olive oil
  • ½ tbsp chopped dill
  • Carefully separate the little gem leaves and place on a serving platter. Divide the salmon, avocado, grapefruit and beans between the lettuce cups. Whisk together the crème fraîche, olive oil and lemon juice, and spoon the dressing over the lettuce cups. Scatter with dill and black pepper to finish. Delicious!
