Smoked Salmon with Avocado Pate
- 3 avocados
- 1 lime, juice only
- 2 chopped spring onions
- 50g cream cheese
- Pinch of cayenne
- 400g smoked salmon
- Chives, to serve
- For the Dressing
- 2 chopped spring onions
- 2 tbsp fresh orange juice
- 6 tbsp olive oil
- Toss the flesh of the avocados into a food processor with the lime juice, cream cheese, spring onions and cayenne pepper. Season to taste and whizz until smooth. Spoon into a small bowl, cover with film and chill in the fridge for an hour. Meanwhile, make your dressing by mixing the ingredients together with some seasoning in a small bowl.
- Divide the salmon between plates, and add a quenelle of the pate. Spoon the dressing around the edge of each plate, garnish with chives and serve with wholemeal toast.
