Smoked Salmon with Avocado Pate

  • 3 avocados
  • 1 lime, juice only
  • 2 chopped spring onions
  • 50g cream cheese
  • Pinch of cayenne
  • 400g smoked salmon
  • Chives, to serve
  • For the Dressing
  • 2 chopped spring onions
  • 2 tbsp fresh orange juice
  • 6 tbsp olive oil
  • Toss the flesh of the avocados into a food processor with the lime juice, cream cheese, spring onions and cayenne pepper. Season to taste and whizz until smooth. Spoon into a small bowl, cover with film and chill in the fridge for an hour. Meanwhile, make your dressing by mixing the ingredients together with some seasoning in a small bowl.
  • Divide the salmon between plates, and add a quenelle of the pate. Spoon the dressing around the edge of each plate, garnish with chives and serve with wholemeal toast.
