Smoky Bacon and Tomato Soup
- 1 tsp olive oil
- 1⁄2 onion, chopped
- 2 garlic cloves, chopped
- 4 rashes of smoky bacon, chopped
- 1⁄2 pint chicken stock
- 2 tomatoes, chopped
- 2 tbsp tomato puree
- Heat the oil in a pan, and gently soften the onion and garlic. Add the bacon, and fry for 3 minutes, then pour over the stock, along with the tomatoes and tomato puree.
- Cook the mixture for 5 minutes, then blend with a hand blender until it is smooth. Serve hot with crusty bread.
