Smoky Bacon, Tomato, and Paprika Spaghetti

  • 400g spaghetti
  • 1 tbsp olive oil
  • 130g smoky bacon, sliced into matchsticks
  • 1 chopped garlic clove
  • 1 chopped onion
  • 2 tsp sweet smoked paprika
  • 2 x 400g tins of chopped tomatoes
  • Grated parmesan to serve
  • Cook the spaghetti in salted boiling water until al dente. Meanwhile, heat the oil in a frying pan and fry the bacon for 4 mins, until starting to crisp. Stir in the onion, cook for 4 mins more, then add the paprika and garlic for another minute. Pour in the tomatoes, and allow it to bubble away for 5-10 mins to thicken. Drain the pasta and toss with your sauce, before grating over lots of parmesan to serve.
