Smoky Beef Kofta

  • 2 tsp olive oil
  • 500g minced beef (around 12% fat)
  • 1 tsp ground cumin
  • 1.5 tsp smoked paprika
  • 1 tsp fine sea salt
  • 1 onion, quartered
  • Mint sprigs, to serve
  • Mix the beef with the salt, some pepper and the spices in a bowl. Divide into 8 portions and press firmly onto 8 skewers.
  • Brush the kebabs with a little oil, then griddle for 10 mins, turning 4 times or until well browned all over and cooked through. Add the onion wedges to the griddle for 5 mins and griddle until charred, then serve alongside the kebabs with a chipotle yoghurt dip, or anything else you fancy.
