Smoky Black Bean Tacos
- 1 tbsp veg oil
- 3 chopped garlic cloves
- 3 x 400g tins of black beans, drained
- 3 tbsp red wine vinegar
- 1.5 tbsp honey
- 1.5 tbsp each smoked paprika and ground cumin
- Flour tortillas, to serve
- Salsa and hot sauce, to serve
- Heat the oil and fry the garlic for a minute or two, then tip in the beans. Pour over the vinegar, honey, and spices, along with some seasoning. Cook until warmed through, crushing gently with a wooden spoon. Serve in warmed tortillas with whatever sauces or cheese you fancy.
