Smoky Boston Beans with Ham
- 2 tbsp olive oil
- 2 crushed garlic cloves
- 2 tbsp smoked paprika
- 500g pork loin steaks, quartered
- 2 x 400g cans cannellini beans, drained
- 400g quality passata
- 2 tsp chipotle paste or similar
- 1 tbsp brown sugar
- 100g cooked ham hock, shredded
- 4 slices crusty white bread
- Handful flat-leaf parsley, chopped
- Preheat the oven to 180C. Mix together the garlic, oil and paprika and rub into the pork steaks. Mix the beans, passata, sugar, chipotle and ham hock in a shallow oven dish, then nestle the pork in the beans. Bake for 40 mins, then serve with toasted bread and a sprinkling of parsley.
