Smoky Prawn Quesadillas

  • 1 tbsp olive oil
  • ½ sliced red onion
  • 1 red capsicum, sliced
  • 70g chopped chorizo
  • 1 crushed garlic clove
  • 1 tbsp chipotle paste
  • ½ tsp each of ground cumin and coriander
  • 100g raw king prawns, chopped
  • Juice of 1 lime
  • 2 large tortillas
  • Guacamole, to serve
  • Heat the oil in a frying pan, and cook the onion and capsicum for 10 mins. Chuck in the chorizo, fry for 5 mins more, then stir in the chipotle paste, spices, garlic, and prawns, and fry for another 2 mins. Season well, and squeeze in the lime juice.
  • Spread the cooked mixture all over 1 tortilla, and top with the second one. Heat a dry pan over a high heat, and add the quesadilla for 1-2 mins on each side. Cut into 4, and serve with freshly made guacamole and iceberg lettuce.
