Smoky Prawn Tapas

  • 2 tbsp olive oil
  • 1 sliced onion
  • 2 crushed garlic cloves
  • ½ tsp smoked paprika
  • 400g tin of chopped tomatoes
  • Splash of sherry vinegar
  • Pinch of sugar
  • 125g peeled king prawns
  • Handful of chopped coriander
  • Sliced green chillies and lemon wedges, to serve
  • Fry the onion in the oil for 10 mins, then stir in the garlic and paprika. Cook for 3 mins more, then add the tomatoes, vinegar and sugar, season well, and simmer for 20 mins until reduced and glossy. Add the prawns to the pan and stir to coat before cooking for 3 mins, then stir through the coriander. Serve with sliced chillies, some coriander sprigs, and a hunk of crusty bread.
