Soba Noodles with Mackerel and Tahini

  • 100g soba noodles
  • 10g sliced runner beans
  • 80g smoked mackerel fillet, skin removed
  • 1 tbsp tahini
  • ¼ tsp chilli oil
  • 1 carrot, cut into matchsticks
  • 1 sliced spring onion
  • ½ tsp sesame seeds
  • Cook the noodles according to pack instructions. Add the beans for the last 2 mins of the cooking time, then drain and refresh under the cold tap.
  • Mix the tahini and chilli oil with 1 tbsp of water to loosen, then season and add to the drained noodles and beans. Add the mixture to a bowl with the carrot, flaked smoked mackerel and spring onion. Toss to combine, then serve with a sprinkling of sesame seeds.
