Soba Noodles with Mackerel and Tahini
- 100g soba noodles
- 10g sliced runner beans
- 80g smoked mackerel fillet, skin removed
- 1 tbsp tahini
- ¼ tsp chilli oil
- 1 carrot, cut into matchsticks
- 1 sliced spring onion
- ½ tsp sesame seeds
- Cook the noodles according to pack instructions. Add the beans for the last 2 mins of the cooking time, then drain and refresh under the cold tap.
- Mix the tahini and chilli oil with 1 tbsp of water to loosen, then season and add to the drained noodles and beans. Add the mixture to a bowl with the carrot, flaked smoked mackerel and spring onion. Toss to combine, then serve with a sprinkling of sesame seeds.
