South African Mango Chicken
- 1 tbsp oil
- 1 chopped onion
- 1 chopped garlic clove
- 1 deseeded red chilli, chopped
- 6 tbsp mango chutney
- 1 tbsp Worcestershire sauce
- 6 tbsp mayo
- 8 chicken thighs
- Brown rice, to serve
- Preheat the oven to 200C. Heat the oil in a frying pan and cook the garlic, onion and chilli until softened. Stir in the mayo, Worcestershire sauce and chutney, and season well.
- Arrange the chicken on a lined baking tray and spoon over the chutney mixture. Roast for 45 mins until cooked and sticky, then serve with cooked brown rice.
