South African Mango Chicken

  • 1 tbsp oil
  • 1 chopped onion
  • 1 chopped garlic clove
  • 1 deseeded red chilli, chopped
  • 6 tbsp mango chutney
  • 1 tbsp Worcestershire sauce
  • 6 tbsp mayo
  • 8 chicken thighs
  • Brown rice, to serve
  • Preheat the oven to 200C. Heat the oil in a frying pan and cook the garlic, onion and chilli until softened. Stir in the mayo, Worcestershire sauce and chutney, and season well.
  • Arrange the chicken on a lined baking tray and spoon over the chutney mixture. Roast for 45 mins until cooked and sticky, then serve with cooked brown rice.
