Spaghetti with Chorizo and Purple Broccoli

  • 2 garlic cloves
  • 200g chopped chorizo
  • 3 eggs plus 2 egg yolks
  • 120g grated parmesan
  • 400g spaghetti
  • 250g chopped purple sprouting broccoli
  • Fry the garlic cloves with the chorizo in a large pan for 7 mins, or until the chorizo is turning crisp. Discard the garlic cloves. Meanwhile, whisk the eggs and extra yolks in a bowl, and mix in the parmesan and some salt and pepper.
  • Cook the spaghetti in boiling salted water for 5 mins, then add the broccoli and cook for 2 mins more. Drain, then toss the lot into the pan with the chorizo and toss in the egg mixture to coat. Loosen with some of the pasta cooking water, then serve in bowls. Easy!
