Spaghetti with Prawns and Harissa
- 100g long-stem broccoli, sliced into three
- 180g wholemeal spaghetti
- 2 tbsp olive oil
- 1 large bashed garlic clove
- 160g cherry tomatoes, cut in half
- 160g raw king prawns
- 1 heaped tbsp harissa paste
- 1 lemon, zest only
- Cook the broccoli in boiling salted water for 90 seconds or until tender, then drain and set aside. Cook the pasta until al dente, then drain and reserve a ladleful of water. Meanwhile, heat the oil in a pan and fry the garlic clove for 2 mins. Remove and discard, leaving the aromatic oil behind.
- Toss the tomatoes in the pan and fry for 5 mins or until softened. Stir through the prawns and cook until pink, then stir in the harissa and zest, mixing well to coat. Toss the cooked pasta and water through the prawns, then stir in the broccoli and toss to coat. Season, serve, and enjoy.
