Spaghetti with Salmon, Broccoli and Tzatziki

  • 200g spaghetti
  • 250g purple sprouting broccoli, cut into 4cm pieces
  • 180g poached salmon fillets
  • 180g tzatziki
  • ½ lemon, zest and juice
  • 10g grated parmesan
  • Cook the spaghetti in boiling salted water until al dente, adding the chopped broccoli for the final 3 mins of the cooking time. Before draining, scoop out of a cupful of the cooking water. Meanwhile, flake the poached salmon and discard the skin.
  • Return the drained pasta to the pan and stir in the tzatziki, flaked salmon, lemon zest and squeeze of juice. Loosen with a splash of cooking water, season well, then mix through the cheese and serve immediately.
