Spanakopita Filo Rolls

  • 400g chopped spinach
  • 2 tbsp olive oil
  • 350g crumbled feta
  • 6 chopped spring onions
  • 1 egg, plus 1 beaten egg for glazing
  • Bunch of dill, chopped
  • Grated nutmeg
  • 1 lemon, zest only
  • 8 spring roll filo pastry wrappers
  • 2 tbsp white sesame seeds
  • Pour a kettle full of water over the spinach in a colander, then leave to cool and squeeze out as much moisture as possible. Heat the oven to 200C.
  • Cook the spring onions in the olive oil to soften, then tip into a large bowl and season liberally. Add the spinach, egg, dill, a pinch of nutmeg, feta and lemon zest and mix very well.
  • Add 4 tbsp of the mixture to each spring roll wrapper and fold to enclose. Use some beaten egg to seal, then glaze with more beaten egg and sprinkle with sesame seeds. Bake for 25 mins or until golden and crisp, then serve with some tzatziki dip. Delicious!
