Spanish Beef Stew Recipe

What you'll need:

  • 1kg braising steak, chopped
  • 2 onions, cut into wedges
  • 2 crushed cloves of garlic
  • 2 red peppers cut into chunks
  • 225g chorizo, thickly sliced
  • 1 tsp chilli flakes
  • 2 tsp smoked paprika
  • 1 tsp ground cumin
  • 2 cans of chopped tomatoes
  • 2 tbsp tomato puree

Method

First

Preheat your oven to 160C. Brown the meat all over in a large pan, with a bit of olive oil, before putting into a large casserole dish along with the cooking juices.

Second

In the same pan, soften the onion for five minutes, and then add the chorizo, peppers, garlic and spices. Fry gently for a few minutes, until the chorizo has bled its oil into the other ingredients. Add the tomatoes, the tomato puree and cook for a further five minutes, stirring regularly.

Third

Add the whole lot to the meat in the casserole dish. Put the dish on the hob, and bring to the boil. When bubbling, cover it, and stick it in the oven for two and half hours, until the beef is very tender and falling apart. Serve hot with rice or crusty bread.
