Spanish-Style Beef Stew
- 4 tbsp veg oil
- 900g stewing beef steak, diced
- 2 chopped onions
- 2 tbsp paprika
- 1 crushed garlic clove
- 1 jar of tomato and herb passata
- 1 beef stock cube
- 2 red capsicums, cut into chunks
- 250g small mushrooms, halved
- 1 sweet potato, cut into chunks
- Heat the oil in a frying pan, and fry the beef until browned all over. Remove with a slotted spoon and place into a casserole dish. Add the onions to the pan and fry for 5 mins, then stir in the paprika and garlic to cook for a minute more. Pour in the sauce, followed by a jar full of water and the stock cube.
- Add the capsicums, mushrooms and sweet potato, bring to the boil, then tip the lot into the casserole. Simmer for 1 hour on a low heat. Season to taste, and serve hot with your choice of sides.
