Spanish-Style Pasta Salad

  • 300g fusilli pasta
  • 4 chopped spring onions
  • 1 chopped red and green pepper
  • 1 chopped red chilli
  • 200g cherry tomatoes, halved
  • For the Dressing
  • 4 tbsp olive oil
  • 2 crushed garlic cloves
  • 1 lime, juice only
  • ½ tsp smoked paprika
  • 100ml passata
  • Cook the pasta until al dente in boiling salted water, then drain and set aside. Combine the dressing ingredients in a bowl and season to taste.
  • In a salad bowl, combine the pasta, peppers, spring onions, chilli and tomatoes. Add the dressing and toss well, then serve. Simple!
