Spanish-Style Pasta Salad
- 300g fusilli pasta
- 4 chopped spring onions
- 1 chopped red and green pepper
- 1 chopped red chilli
- 200g cherry tomatoes, halved
- For the Dressing
- 4 tbsp olive oil
- 2 crushed garlic cloves
- 1 lime, juice only
- ½ tsp smoked paprika
- 100ml passata
- Cook the pasta until al dente in boiling salted water, then drain and set aside. Combine the dressing ingredients in a bowl and season to taste.
- In a salad bowl, combine the pasta, peppers, spring onions, chilli and tomatoes. Add the dressing and toss well, then serve. Simple!
