Speedy Chicken Sweet ‘n’ Sour
- 9 tbsp ketchup
- 2 tbsp malt vinegar
- 4 tbsp dark brown sugar
- 2 crushed garlic cloves
- 4 chicken breasts, cut into chunks
- 1 onion, chopped
- 2 red peppers, chopped
- 1 small tin of pineapple chunks, drained
- 100g sliced mangetout
- Handful of roasted cashews
- Mix together the ketchup, sugar, vinegar and garlic in a large bowl, stir in the onion, garlic, and peppers, and set aside. Heat up a drop of oil in a large pan, and fry the chicken pieces all over for 10-15 mins, or until golden and cooked through. Pour in the veggies and sauce, and cook for a few minutes to combine and soften.
- Stir in the pineapple chunks and mangetout, and cook everything together for about 3 mins. Stir in the cashews, and serve with egg-fried rice.
